LowCountry Barbecue
By skirtySteph, Thursday, July 22, 2010Whole pig, hand pulled Carolina 'cue is the only way to go.
Slap some of grandma's potato salad, to-die-for banana pudding and vegetarian-style baked beans next to it and that's an even better way to go.
The LowCountry in Smyrna is known for its uniqueness, thanks to the Gullah way of cooking. Their methods for cooking 'cue were passed down to the Brown family from an old family friend, “Mose.” “Mose” shared with Brown’s Aunt Virginia what is now their 70-year-old vinegar based barbecue sauce recipe.
In 1986, after graduating from Georgia State University, Bennett Brown turned his family recipes and traditions into a full-service barbecue catering company. Twenty five years later, they're still smoking pork and chicken for 18 hours in a pit before they serve it up. Even Julia Child has gobbled up this shredded stuff.
Not a sit down joint, you can get express deliveries, carryouts or catering. They'll bring it all to you.
